Épicure Blanc

L’Epicure Blanc 2023 from Château Valcombe is an elegant wine, both rounded and mineral, with delicate notes of white fruit and a subtle hint of oak.

It has an ageing potential of 5 to 7 years.

With an annual production limited to just 5,000 bottles, it remains truly exclusive.

Terroir

Located in the commune of Saint-Pierre-de-Vassols, on northwest-facing hillsides at 250 meters of altitude, overlooking the Dentelles de Montmirail.

Clay-sandy soils.

The vines are cared for with shoot thinning, leaf removal, and manual destemming (green harvest).

Hand-picked harvest with meticulous sorting.

Winemaking and ageing

Cold pre-fermentation maceration (night harvest) with settling.

Fermentation and ageing in barrels for 20% of the volume.

Ageing on full lees in concrete vats and barrels.”

Tasting advice and pairings

From old vines, this wine has depth and substance. Best enjoyed at the table, it pairs beautifully with fish in sauce, creamy white meats, and above all, with cheese.

Tasting notes

Colour : Golden yellow.
Nose : Elegant, expressive and complex, with soft notes of white flowers, honey and pineapple.
Palate : Sweetness and volume on the attack. Lovely freshness from the acidity. Great consistency with fleshy, slightly tannic sensations. Rounded and full-bodied, with toasted notes and hints of white fruit.
