Le Rosé de Valcombe

The Rosé of Château Valcombe is a gourmet wine, well-balanced, with aromatic expression between red fruits such as cherry and strawberry, and ripe fruits such as plum. A lovely bright color that perfectly matches its freshness.

Annual production: 16,000 bottles.

Terroir

Located in the commune of Saint-Pierre-de-Vassols, on northwest-facing hillsides at 250 meters of altitude, facing the Dentelles de Montmirail.

Clay-sandy topsoil with brown silty layers, pebbles and gravel, followed by fine dark ochre sand with patches of oxidized stones.

The vines are cared for with shoot thinning, leaf removal, and manual destemming (green harvest).

Hand-picked harvest with sorting.

Winemaking and ageing

Direct pressing, cold pre-fermentation maceration (night harvest), with two settling phases, no fining.

Ageing in concrete vats on fine lees.

Tasting advice and pairings

It can be served as an aperitif, but also as an accompaniment to meals.

With its soft fruitiness, it pairs beautifully with spicy and flavorful dishes, and more traditionally with grilled meats.

Best enjoyed within the next two years.
